Gluten Free Fried Green Tomatoes
Ingredients:
- 2 medium green tomatoes, sliced 1/4-1/2 inch thick
- 1 egg
- 2 tsp – 1 tbsp garlic powder (depending on preference)
- 3 tbsp coconut flour
- 5 tbsp grated parmesan cheese
- 1/2 tsp paprika
- 1/4 tsp ground black pepper
- 3 tbsp arrowroot powder
- 6 tbsp bacon grease (or coconut oil)
- 1/4 cup milk (I used raw milk but 2 tbsp full-fat coconut milk works well too)
Instructions:
- Place the arrowroot powder by itself in a small bowl. Whisk the egg and milk together in another small bowl. Then, combine the dry ingredients together in a separate medium bowl. So, you’ll have 3 bowls total.
- Dip the sliced green tomato in the dry ingredient batter making sure to cover both sides. Then, dip the battered sliced green tomato into the arrowroot powder making sure to cover both sides. Next, dip the sliced green tomato into the whisked egg and milk and finally dip it a final time into the dry ingredient batter.
- Place each slice onto a plate after it’s done being dipped.Heat bacon grease over medium-high (70-80%) heat in a small skillet. You’ll need the grease to be about 1/4-1/2 inch deep in the pan.Once the bacon grease is completely melted, place a 1-2 slice(s) of the battered green tomato in the skillet and fry it for about 15 seconds on each side, or until the batter has turned golden brown.
- Let the fried green tomatoes cool slightly after frying and before eating them. Also, make sure to share and eat all of them since they soggy if you store them in the fridge as leftovers. Enjoy!
- *Note: The larger the skillet you use the more bacon grease or coconut oil you’ll need.
