CAULIFLOWER MEXICAN RICE

PALEO + KETO

This rice is seasoned with spices, garlic, onion, peppers, and tomatoes and is the perfect substitute for Mexican rice. This recipe is paleo, keto, whole30, and vegan-friendly.

INGREDIENTS

Cut off the stem of the cauliflower head then cut it into large florets and place in a food processor.

STEP 1

Process until the cauliflower has broken down into small rice sized pieces.

Sauté the veggies.

STEP 2

Sauté onion and garlic  Add in the peppers and stir for an additional  2 minutes.

Cook the cauliflower rice.

STEP 3

Add riced cauliflower, and the rest of the ingredients and cook until the cauliflower becomes tender but not mushy. Stir in the chopped cilantro just before serving.
