These one-bowl almond flour blondies are easy to make and are tastier than any other cookie bar I’ve ever had! This recipe is gluten and dairy-free!

Ingredients
- 1/2 cup coconut oil, melted
- 1 cup brown sugar or coconut sugar
- 2 eggs at room temperature
- 2 teaspoons vanilla
- 1 1/4 cup almond flour
- 1/2 cup cassava flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips (I used dairy-free chocolate chips)
- 1 cup white chocolate chips (I used dairy-free white chocolate chips)
Instructions
- Preheat the oven to 350° F.
- Line and grease an 8×8-inch pan.
- Cream the brown sugar, eggs, coconut oil, and vanilla in a medium bowl.
- Add the almond flour, cassava flour, baking powder, and salt. Mix until well combined.
- Fold in the chocolate chips and pour the batter into the prepped baking dish.
- Smooth the top of the blondies with a spatula.
- Bake the blondies for 25 minutes or until golden brown.
- Allow the blondies to cool before cutting and serving.
