
Step 1: Take one very ripe banana and gently mash it with a fork.
Step 2: Pour in the vodka, ensuring the banana is very, very well covered as it will expand.
Step 3: Place the solution in a cool and dark place and shake AT LEAST once a day. This prevents any banana that floats to the top of the vodka from becoming moldy.
Step 4: Once your extract has reached its desired flavor (mine took three weeks), strain it through cheesecloth or a clean T-shirt into a bottle or jar.
Step 5: Store in a cool and dry place and use within one year.
