Boursin Cheese Spaghetti Squash

This tasty boursin spaghetti squash is so tasty and comes together with just a few ingredients! This is a wonderful low carb meal that has fresh flavor and is a great option for pasta lovers!

  1. Preheat your oven to 400°F.
  2. Carefully cut the spaghetti squash in half. If the squash is too difficult to cut, you can poke it with a fork and microwave it for 5 minutes to soften it.
  3. Remove the seeds and strings.
  4. Place the squash cut side up on a baking sheet.
  5. Oil the squash with olive oil, and season with salt and pepper.
  6. Place half a brick of boursin cheese in the middle of each squash.
  7. Add in a half a cup of tomatoes and bake for 1 hour and 20 minutes.
  8. Let the squash cool for 5-10 minutes.
  9. Use a fork to shred the spaghetti squash and mix the squash with the cheese and tomatoes.
