This tasty boursin spaghetti squash is so tasty and comes together with just a few ingredients! This is a wonderful low carb meal that has fresh flavor and is a great option for pasta lovers!

Ingredients
1 spaghetti squash
1 brick of boursin cheese
1cup cherry tomatoes
olive oil
salt & pepper
Instructions
Preheat your oven to 400°F.
Carefully cut the spaghetti squash in half. If the squash is too difficult to cut, you can poke it with a fork and microwave it for 5 minutes to soften it.
Remove the seeds and strings.
Place the squash cut side up on a baking sheet.
Oil the squash with olive oil, and season with salt and pepper.
Place half a brick of boursin cheese in the middle of each squash.
Add in a half a cup of tomatoes and bake for 1 hour and 20 minutes.
Let the squash cool for 5-10 minutes.
Use a fork to shred the spaghetti squash and mix the squash with the cheese and tomatoes.
