These gluten-free coconut brownies are soft and chewy with a coconut twist! These are a wonderful treat for the coconut lover in your life!

  1. Preheat the oven to 350 degrees F.
  2. Grease an 8×8-inch pan and line it with parchment paper.
  3. Cream the coconut oil and sugar in a large bowl with a whisk. Add the eggs and vanilla and beat until combined.
  4. Add the flour, cocoa powder, baking powder, and salt. Mix well.
  5. Fold in 3/4 cup of the shredded coconut and chocolate chips.
  6. Pour the batter into the prepped pan and top with remaining 1/4 cup shredded coconut and chocolate chips.
  7. Bake for 25-30 minutes or until the center is set.
  8. Cool before cutting.
