Enjoy these tart and textured Coconut Lime Bars, made with shredded coconut, whole oats, and a tangy lime frosting that will remind you of your favorite coffee shop!

Instructions

  1. Begin by preheating the oven to 350 degrees F. Line an 8×8 square baking pan with parchment paper and spray with cooking spray.
  2. In a large bowl, cream the butter and brown sugar together using a hand mixer. Beat until light and fluffy, about 1-2 minutes.
  3. Add the egg and beat until combined. Then, add the vanilla.
  4. To the same bowl, add the oats, oat flour, all-purpose flour, baking powder, and salt. Using a spatula, fold the dry ingredients into the wet, being sure not to overmix.
  5. Once the flour has only a few dry spots within the batter, add the coconut and white chocolate. Fold all together until just combined.
  6. Press the mixture into the greased and lined baking pan into an even layer. 
  7. Bake for 30 minutes until golden brown and set. Once done, your finger lightly pressed in the center should stay firm and not make a dent.
  8. Allow to cool completely before frosting. 
  9. To make the frosting:
  10. Using a hand mixer and a medium bowl, beat the cream cheese and butter until fluffy and combined. Slowly incorporate the powdered sugar in batches so that it doesn’t spill out of the bowl.
  11. Add the lime zest, juice, and one small drop of green food coloring. Beat until everything is well incorporated.
  12. Frost the bars while still whole in the pan. Then, cut into 9 squares.
  13. Serve at room temperature.
  14. Allow the bars to cool completely before frosting. This will ensure the frosting does not melt off of the bars.
  15. Press the dough well into the pan! You are looking for more of a “bar” texture rather than a “cakey” texture.
