Gluten-Free Oatmeal Raisin Cookies

  1. Preheat the oven to 350 degrees F.
  2. In a large mixing bowl, combine the oat flour, rolled oats, baking powder, cinnamon, nutmeg, and salt. Whisk until well combined.
  3. In a separate bowl, add the melted butter and brown sugar. Whisk until the sugar dissolves slightly. Then, add the egg and vanilla. Mix well.
  4. Fold the dry ingredients into the wet ingredients carefully. Add the raisins and mix. Do not overwork the dough!
  5. Using a ¼-cup measuring cup, scoop equal-sized cookies onto a parchment-lined baking sheet spread at least 2-inches apart. Top with additional raisins if desired.
  6. Bake 10-12 minutes until the cookies are lightly browned.
  7. Remove from the oven and allow to cool before enjoying.


Do not skimp on the cinnamon and nutmeg. Both add a warming spice to these cookies that is so reminiscent of the holidays.

You may need to grease your measuring cup when rolling out the cookies.

Use a parchment-lined baking sheet so that your cookies do not stick to the pan. If you do not have parchment, grease your cookie sheet very well with softened butter.
