Homemade Almond Cheese

Cheese from almonds?! Yes, please! This Homemade Almond Cheese is dairy-free, gluten-free, and so easy to make!

Ingredients

1 cup blanched almonds, raw & without skin

1/4 cup water

2 tbsp lemon juice

2 tbsp olive oil

1/2 tsp salt

Optional: 2 tbsp roasted garlic nutritional yeast in blender, fresh rosemary for topping

Instructions

Soak almonds in a bowl full of water overnight. 

Add all ingredients into a blender and blitz until smooth.

Dampen a square piece of cheesecloth. If using additional ingredients, like fresh rosemary, place pieces onto the cheesecloth. 

Scoop the mix from the blender onto the cheesecloth. Optional: sprinkle fresh rosemary on top. Twist and tie the ends of the cloth together tightly. 

Place the cheesecloth bundle on top of a rack with a bowl underneath for liquid to drain. Place in fridge overnight.

The next day, remove from fridge, unwrap cheesecloth, and devour!
