Enjoy this dairy-free tigernut milk made with two ingredients: tiger nuts and water! This easy homemade milk substitute is a paleo and vegan-friendly alternative to cow’s milk.

  1. Soak the dried tigernuts in 3 cups of water for 6-8 hours. This will soften the nuts and allow them to process in the blender. 
  2. Place the soaked nuts in a blender and blend on high until the nuts grind into a fine meal. 
  3. Add the water and blend on high for 30-60 seconds.
  4. Strain the nut milk through a nut bag or fine mesh strainer over a bowl. Pour the milk into a glass jar and refrigerate. 
  5. The nut pulp can be used to make tigernut flour or can be composted. 
  6. Store the milk in the fridge for up to a week.
