This simple cauliflower rice recipe can be made with a cheese grater or food processor and makes a great side dish. This is the best keto friendly rice substitute!

One large head of cauliflower
Wash and dry the raw cauliflower head and remove the greens.
Cut the fresh cauliflower in half, then into chunks, or cut up the cauliflower florets.
Then use a box grater to grate the cauliflower into rice size pieces. Alternatively, you can use a food processor with a grater attachment to grate the cauliflower into rice.
Place the riced cauliflower into a paper towel-lined strainer and gently press the cauliflower to remove any excess water.
Next, you can use the riced cauliflower to make your favorite keto cauliflower recipe or sauté it in a skillet with one tbs of coconut to make fried rice or cover it with a lid to make steamed cauliflower rice.
Store leftover cauliflower rice in an airtight container in the refrigerator for up to five days.
