
2 cups self-rising almond flour (or add 2 tsp baking powder to the 2 cups almond flour)
2 1/4 cups cheddar cheese (shredded)
2 tsp Italian seasoning
1 tsp garlic powder
1 lb ground sausage meat
5 – 6 oz cream cheese (at room temperature)
Step 1: Preheat oven to 400°F. Line a baking sheet with parchment paper.
Step 2: Combine self-rising almond flour, shredded cheddar, and seasonings in a large bowl.
Step 3: Add in the cream cheese and sausage until combined—use your hands and avoid over-mixing.
Step 4: Shape 1-inch balls with a spoon and arrange on the baking sheet.
Step 5: Bake for 8 minutes, rotate the balls to prevent sticking, then bake for an additional 8 minutes until nearly cooked. Finish by broiling for two more minutes until browned.
