Ingredients
1 cup pecans, finely chopped
1/2 cup coconut flour, sifted
1/2 cup butter (1 stick), softened
4 tablespoons powdered Swerve
1 teaspoon vanilla extract
Extra powdered swerve for coating cookies
Instructions
Preheat the oven to 325 degrees Fahrenheit.
Mix the coconut flour, chopped pecans, and powered swerve in a bowl. You can also use a food processor to mix the ingredients and to finely chop the pecans.
Mix in the vanilla butter using an electric mixer or food processor.
Shape dough into 1-inch balls. There will be 12-14 cookies in total.
Place each cookie 1 inch apart, onto an ungreased cookie sheet.
Bake 16-18 minutes or until very lightly browned.
Cool for 5 minutes, then roll in powdered swerve while still warm and again when cool.
