These loaded cauliflower bites are keto-friendly and delicious! These tasty bites are full of flavor and are made with simple ingredients.



  1. Preheat the oven to 350 degrees. 
  2. Add the cauliflower rice, eggs, colby jack cheese, green onions, and salt and pepper to taste in a mixing bowl, and combine well. 
  3. Fill the sections of a well-greased mini muffin tin almost to the top with the cauliflower mixture. 
  4. Bake for 25 minutes. 
  5. Sprinkle the bacon and cheddar cheese, and bake for another 5 minutes. 

*Note: To use fresh cauliflower, simple cut the cauliflower head into pieces, grate them with a cheese grater, and then cook it on the stovetop or in the microwave until soft. Then, follow the recipe as written.
