1 cup cream cheese (at room temp)
1 cup peanut butter
1 cup heavy cream
1 cup powdered sugar (or powdered erythritol)
Instructions
In a medium mixing bowl, beat together the cream cheese, peanut butter, and powdered sweetener until smooth.
In a separate bowl, whip the heavy cream until stiff peaks form. You want it to hold its shape when the beaters are lifted.
Gently beat about a quarter of the whipped cream into the peanut butter mixture. This softens the texture and makes it easier to fold in the rest.
Fold in another 1/2 of the whipped cream, then add the remaining portion until fully combined. Use a spatula to foldgently so you don’t deflate the mousse.
Spoon or pipe the mousse into jars, ramekins, or bowls. Enjoy immediately for a soft mousse, or refrigerate for at least 30 minutes for a firmer, chilled dessert.
Add crushed peanuts, a dollop of whipped cream, dark chocolate shavings, or a sprinkle of cinnamon for a finishing touch.
