This protein bread is excellent for anyone looking to up their protein intake while still enjoying bread!

Ingredients
- 1 teaspoon instant yeast
- 1/4 cup warm water
- 1 tablespoon honey
- 4 egg whites
- 3/4 cup cottage cheese
- 2 1/2 cups flour
- 1/2 tablespoon salt
Instructions
- Combine the water, yeast, and honey. Allow the mixture to rest for 10 minutes.
- Blend the cottage cheese and egg whites in a blender until smooth.
- Pour the cottage cheese mixture into the yeast. Mix to combine.
- Add the flour and salt to the bowl. Mix to combine.
- Flour the surface and knead the dough for 4-6 minutes. You may also use a stand mixer to knead the dough. Knead until smooth.
- Scrap the dough into a ball and place it in a large bowl. Cover the bowl and let the dough proof until double in size, about one hour.
- Once proofed, punch the dough down and spread it over a floured baking sheet. Flatten the dough, then roll it into a loaf-size log.
- Pinch the end of the loaf and place it in a parchment-lined bread pan.
- Let the dough rise for another 20-25 minutes.
- Preheat the oven to 400 degrees F.
- Place the bread in the oven and bake for 40-45 minutes.
- Halfway through baking, place a sheet of foil over the bread to prevent it from burning.
- When the bread is baked through, it will sound hollow when you tap on it.
- Cool before slicing. Enjoy!
