This protein bread is excellent for anyone looking to up their protein intake while still enjoying bread!

  1. Combine the water, yeast, and honey. Allow the mixture to rest for 10 minutes.
  2. Blend the cottage cheese and egg whites in a blender until smooth.
  3. Pour the cottage cheese mixture into the yeast. Mix to combine.
  4. Add the flour and salt to the bowl. Mix to combine.
  5. Flour the surface and knead the dough for 4-6 minutes. You may also use a stand mixer to knead the dough. Knead until smooth.
  6. Scrap the dough into a ball and place it in a large bowl. Cover the bowl and let the dough proof until double in size, about one hour.
  7. Once proofed, punch the dough down and spread it over a floured baking sheet. Flatten the dough, then roll it into a loaf-size log.
  8. Pinch the end of the loaf and place it in a parchment-lined bread pan.
  9. Let the dough rise for another 20-25 minutes.
  10. Preheat the oven to 400 degrees F.
  11. Place the bread in the oven and bake for 40-45 minutes.
  12. Halfway through baking, place a sheet of foil over the bread to prevent it from burning.
  13. When the bread is baked through, it will sound hollow when you tap on it.
  14. Cool before slicing. Enjoy!
