Easy Shrimp Ceviche Recipe (Shortcut)

Shrimp ceviche is an easy meal that takes less than an hour to prepare. This shrimp ceviche “shortcut” comes together in less than 5 minutes, making it a speedy meal to serve any day of the week. This recipe is low-carb, paleo, and whole30 approved!



  1. Rinse the precooked shrimp in a colander and set it aside. If you’re using large shrimp, cut it up into small bite-size pieces. 
  2. Pour the shrimp into a bowl and add the lime juice and pico de gallo. Mix well, then add the olive oil and sea salt. Season with salt to taste.
  3. Divide the ceviche into 4 serving bowls or plates. 
  4. Garnish with sliced avocado and fresh cilantro.
