This copycat Starbucks tomato mozzarella panini recipe will melt in your mouth and disappear off of the plate!
1 pint cherry tomatoes
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup prepared basil pesto
8 oz. fresh mozzarella
4 ciabatta rolls, halved
Preheat the oven to 400 degrees.
Fit a large, rimmed sheet pan with parchment.
Toss the tomatoes with olive oil, salt, and pepper.
Roast for 20 minutes, or until tomatoes have burst. Reserve.
Brush inside of rolls with pesto, top with mozzarella, and tomatoes.
Panini Instructions: Grill the sandwich in a panini press, set to 400 degrees for 3 minutes, flip, and cook for an additional 3 minutes, or until the cheese is melted and the bread is browned. Repeat with remaining sandwiches.
Stovetop Instructions: Preheat a large skillet over medium heat until hot. Place the sandwich in the hot pan, and top with a smaller heavy skillet. Repeat with remaining sandwiches.
Cook for 3 minutes, flip, and cook for an additional 3 minutes, or until the cheese is melted and the bread is browned.
Oven Instructions: Preheat oven to 425 degrees.
Line a large, rimmed sheet pan with parchment.
Bake the sandwiches open faced until the cheese is melted, approximately 7-8 minutes.
Assemble the sandwich, cut in half and serve.
