These strawberry coconut bars come together with a few simple ingredients and are a delicious treat rich in coconut and strawberry flavor!

Instructions
- Combine the shredded coconut, freeze-dried strawberries, coconut oil, and honey into a food processor.
- Process until the strawberry is chopped into fine pieces and combined with the coconut mixture.
- Press the mixture into an oiled 8×8 inch glass dish and freeze for 30 minutes to an hour.
- Once the bars are frozen, remove them from the freezer and cut them into even squares.
- Melt the chocolate chips and 1 tsp of coconut oil together in the microwave.
- Pour the melted chocolate over the strawberry coconut bars and spread evenly over the top.
- Return the bars to the freezer to set for about 20 minutes. Once set, cut the bars and serve.
