
These Almond Flour Chocolate Chip Cookies are a dream for all Trader Joe’s lovers! One bowl, one pan, a dozen fantastic copycat cookies!
1 cup almond flour
1/2 cup coconut flour
1/4 cup tapioca starch
1 tsp baking soda
1/2 tsp salt
3 tablespoons coconut oil, softened
1 cup coconut sugar
3 tbsp milk (dairy or non-dairy)
2 tsp vanilla bean paste or extract
1/2 cup chocolate chips/chopped chocolate
Heat oven to 375 degrees.
Mix dry ingredients in a large bowl.
In a separate bowl, mash oil, sugar, milk, and vanilla bean paste together.
Fold wet ingredients into dry ingredients. If the batter seems dry, add another 1-2 tablespoons of milk. Fold in chocolate.
Scoop cookie dough in tablespoons onto a prepared baking sheet. Bake for 9 minutes.
Let cool slightly, sprinkle with flaky salt, and enjoy!
