Use a sharp knife to slice each vanilla bean lengthwise to expose the flavorful caviar (the tiny black seeds inside). Then, cut the beans in half so they’ll fit better in your jar.
Add the cut vanilla beans and their caviar to a clean glass jar. Pour the sugar over them, making sure the beans are fully submerged.
Seal the jar with a tight-fitting lid and shake well to distribute the vanilla caviar throughout the sugar.
Let the sugar infuse for at least a few days before using, though a couple of weeks will give you the richest flavor.You can leave the beans in the sugar indefinitely to keep enhancing the taste.
For a more intense vanilla hit, mix in 1 teaspoon of vanilla powder before sealing the jar.
