DIRECTIONS: Chop up the pineapple into 1-inch pieces and set aside. Add the pineapple and ice into a blender and blend on high for 30 seconds.
DIRECTIONS: Pour one can of coconut milk, 1/2 cup of fresh pineapple juice (I juiced my pineapple, but you can use store-bought pineapple juice in a pinch), and two tablespoons of coconut sugar (or sweetener of choice) into the blender.
Blend on high for 30-60 seconds, or until the mixture is smooth with some ice chunks.Pour the virgin pina coladas into two-8 ounce glasses. Garnish with fresh pineapple slices and serve.
