One of my favorite tropical drinks is Pina Coladas. They’re excellent on hot days or when you are in the mood for a tropical beverage.
Pre-made Pina Colada mixes often have a lot of sugar and questionable ingredients. Making virgin pina Coladas at home is easy and much healthier!
Virgin Pina Colada Recipe
Ingredients for this recipe: you’ll need one pineapple, a can of coconut cream (cream on top of coconut milk), pineapple juice (I juiced half the pineapple to make pineapple juice), ice cubes, and coconut sugar (or your favorite sugar substitute).
Tools: A blender (I use a Vitamix).
Methode: Chop up the pineapple into 1-inch pieces and set aside. Add the pineapple and ice into a blender and blend on high for 30 seconds.
Pour one can of coconut cream, 1/2 cup of fresh pineapple juice (I juiced my pineapple, but you can use store-bought pineapple juice in a pinch), and two tablespoons of coconut sugar (or sweetener of choice) into the blender.
Blend on high for 30-60 seconds, or until the mixture is smooth with some ice chunks.
Pour the virgin pina coladas into two-8 ounce glasses. Garnish with fresh pineapple slices and serve.

Can I use coconut milk instead of coconut cream in a pina colada? Yes, full-fat canned coconut milk can be substituted. First refrigerate the coconut milk in the refrigerator and then scoop the coconut cream off the top of the can.
Can I use canned pineapple for this virgin piña colada recipe? Yes, make sure to strain the liquid out of the can before added the pineapple. Keep the pineapple juice from the can to add in on step 2 of the recipe.
