My 3-ingredient coconut cookies are not only tasty, but they’re also healthy! These cookies are the simplest cookies you can make! This recipe is paleo, vegan, and whole30 friendly.



  1. Preheat the oven to 350° F. Line a baking sheet with parchment paper, set aside.
  2. Mash the ripe banana in a bowl with a fork. Add the desiccated coconut and vanilla and mix until well combined.
  3. Scoop the cookies with a tablespoon and shape them into small discs, then set them on the parchment-lined baking sheet and bake in the preheated oven for 25 minutes or until golden.
  4. Remove the coconut cookies from the oven and let them cool completely before removing them from the baking sheet.
