I don’t know why this happens, but every time I buy bananas, they disappear right away, or I have to freeze them. So my kids will sometimes devour them up in one day, and then decide they hate bananas.
This week, I had a ton of bananas that needed to get used up. Since I already have a tub of banana ice cream in my freezer, I decided to bake paleo coconut cookies. These cookies are simple to make and require just three ingredients; desiccated coconut, bananas, and vanilla extract.
The bananas perfectly sweeten these 3-ingredient coconut cookies, and they bake up perfectly with a light, crisp crunch.
How to make 3-ingredient coconut cookies
Ingredients:
- 1 ripe banana
- 1 teaspoon vanilla extract
- 3/4 cup unsweetened desiccated coconut (you can also buy shredded coconut)
Method:
Preheat the oven to 350° F. Line a baking sheet with parchment paper, set aside.
Mash the ripe banana in a bowl with a fork. Add the desiccated coconut and vanilla and mix until well combined.
Scoop the cookies with a tablespoon and shape them into small discs, then set them on the parchment-lined baking sheet and bake in the preheated oven for 25 minutes or until golden.
Remove the cookies from the oven and let them cool completely before removing them from the baking sheet.
