
Makes 12 cookies
1/2 cup white sugar
1/3 cup brown sugar
1/2 cup room temperature butter
1 large egg
2 teaspoons vanilla extract
1 1/2 cups blanched almond flour
2 tablespoons desiccated coconut
1/2 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
12 squares of your favorite chocolate
Step 1: In a mixing bowl, cream the butter with both sugars for approximately 1 minute.
Step 2: Mix in the egg and vanilla extract until thoroughly blended.
Step 3: Mix well with all dry ingredients except the chocolate pieces.
Step 4: Chill the dough in the refrigerator for 1 hour. While the dough is chilling, preheat the oven to 350 degrees Fahrenheit.
Step 5: Shape the dough into balls using around one tablespoon of dough and place them on a baking sheet lined with parchment paper.
Step 6: Gently press a piece of chocolate into the center of each dough ball.
Step 7: Bake for 10-15 minutes; in my oven, 12 minutes usually yields perfect results, but each oven varies. The cookies will continue to firm up as they cool.
Step 8: Allow the cookies to cool before serving. Enjoy!
