Enjoy a hot cup of joe (or tea!) with this amazingly sweet, tender Almond Flour Coffee Cake! Naturally gluten-free and vegan-friendly!

Ingredients

Dry Ingredients

2 cups almond flour

1/2 cup all-purpose flour

1/2 cup granulated sugar

2 tsp cinnamon

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Wet Ingredients

1 cup canned coconut milk

4 tablespoons coconut yogurt

1 tsp apple cider vinegar

1 tsp vanilla bean paste

Streusel Topping

1/2 cup almond flour

1/2 cup brown sugar

1 tsp cinnamon

1/4 tsp salt

3 tbsp butter

Instructions

Heat oven to 350 degrees. Prep your desired baking dish with butter or parchment paper.

Add all dry ingredients in a bowl.

Make a well in the dry ingredients and pour in the wet ingredients.

In another bowl, stir together all streusel ingredients.

Pour the wet batter into the baking dish and gently spread the streusel on top. 

Bake in oven for 40 minutes, then remove from the oven and let cool.

Slice & serve with fresh berries and a hot cup of coffee or tea!
