Coffee cake is a distinct style of baked good that is easily recognizable and revered. Lightly moist cake body, bold cinnamon flavor, and crunchy streusel are the top characteristics that make this delicacy unique.
To add even more to the flavor and texture profiles of this coffee cake, we use a combination of almond and all-purpose flours. They provide the cake with a slightly nutty flavor and thick consistency. The tastes fuse with the addition of spices and other elements to create a delectable slice of delight!

Ingredients for the Almond Flour Coffee Cake
Almond Flour – Naturally lower in carbs and sugar than all-purpose, almond flour works amazingly in baked goods!
All-Purpose Flour – All-purpose flour is needed to help stabilize the coffee cake, as almond flour on its own is extremely delicate and prone to crumble. To make this cake gluten-free, you can use a gluten-free flour instead but the texture will change.
Granulated Sugar – Cake is sweet, it needs sugar! Granulated or brown sugar will both work in this recipe.
Cinnamon – Cinnamon adds warmth to the coffee cake, as well as matches excellently with coffee itself.
Baking Powder – Because almond flour does not contain gluten, recipes using it need more leavening agents to increase their volume, so 1 tablespoon of baking powder is used in this recipe.
Baking Soda – Like as stated above, almond flour needs extra help to rise. Baking soda pairs with baking powder for ultimate lifting power.
Salt – Salt is a the small bit of savory essence needed to balance the sweetness.
Coconut Milk – Coconut milk boosts the nutty flavor of the almond flour, as well as provides a creamy flavor.
Coconut Yogurt – Coconut yogurt acts as an ingredient binder and gives the coffee cake a delicious tang.
Apple Cider Vinegar – Apple cider vinegar is the acid needed to activate the baking soda and allow the cake to rise.
Vanilla Bean Paste – If you don’t have vanilla bean paste, don’t worry! Vanilla bean extract has an almost identical taste and substitutes 1:1.
Brown Sugar – Granulated sugar can be used in place of brown sugar for the streusel, but brown sugar adds extra depth with its rich molasses flavor.
Butter – Melted butter will allow the streusel mixture to spread nicely on top of the cake, as well as give it a toasty flavor as it bakes.

How to Make Almond Flour Coffee Cake
Step One: Heat oven to 350 degrees. Prep your desired baking dish with butter or parchment paper.
Step Two: Add all dry ingredients in a bowl.
Step Three: Make a well in the dry ingredients and pour in the wet ingredients.
Step Four: In another bowl, stir together all streusel ingredients.
Step Five: Pour the wet batter into the baking dish and gently spread the streusel on top.
Step Six: Bake in oven for 40 minutes, then remove from the oven and let cool.
Step Seven: Slice & serve with fresh berries and a hot cup of coffee or tea!

FAQ
Using proper leavening agents! For a fluffy, well-risen cake using almond flour, use either eggs or applesauce, as well as extra baking powder/soda.
Either there is not enough liquid ingredients or the batter was over mixed. Almond flour absorbs additional ingredients quickly and, if over mixed, can dry out rapidly when in the oven.
Crumble cake has a thicker streusel topping while coffee cake has a thinner topping or none at all.
Almond flour will provide cakes with a more moist texture and nuttier flavor, when compared to regular all-purpose flour. It is also naturally gluten-free so is safe for those with gluten sensitivities.

You call it dairy free, but it has butter in it! To be DF, you’d need to sub that, which is easy to do, but those not used to doing that could claim DF,GF. That could compromise an allergic person’s health! Please correct that and add suggested substitutions.

Hi, I love almond flour cake and would like to try this, but what size pan do you use please?

Hi Wendy! I used an oval baking dish that was approximately 10”x7”. Any dish around these dimensions, like a 9×9”, will work well. Keep in mind, the bigger the pan, the thinner the cake.
