Almond Flour Noodles (Delicious!)

Never buy boxed pasta noodles again! These Almond Flour Noodles can be made in 30 minutes for a fresh, fantastic dinner!

Ingredients

1 cup blanched almond flour

1 cup tapioca starch

1/2 cup arrowroot starch

1/4 tsp salt, + more for boiling water

1/4 tsp xanthan gum

1/2 cup water, + 23 tsps if needed

1 tbsp olive oil

Instructions

Mix all dry ingredients in a medium-sized bowl.

Make a well in the middle and slowly pour water and oil into the center. Mix until incorporated with a spatula or wooden. If the mixture is too dry, add more water about a teaspoon at a time.

Knead until a smooth dough ball forms. Place between two pieces of parchment paper and roll into a long rectangle shape about 1/8” thick. 

(If using a pasta machine) – Cut dough into long strips and feed each piece through the pasta machine. Lay out the fresh noodles and let rest for 15 minutes.

(If using a pizza cutter) – Cut dough into noodles about 1/4” wide. Lay out the fresh noodles and let rest for 15 minutes.

Bring a pot of salted water to a boil, add noodles, and cook for 3 minutes.  Scoop up noodles and plate with your choice of sauce and enjoy!
