That’s right! Almond flour once again proves its adaptability from sweet to savory dishes by creating the most delectable noodles! These noodles are tender, chewy, and so fresh! Our recipe uses a combination of almond flour and two starches to create puffy noodles: tapioca starch and arrowroot starch. Xanthan gum is added next to provide flexibility to the pasta dough so they are easier to roll out and cut into noodles. Because of these incredible ingredients, this Almond Flour Noodles recipe is completely egg-free!

Almond Flour Noodles are an easy way to impress dinner guests. A pasta machine is best to create evenly thin noodles, but a rolling pin and pizza cutter work well, too. You can press fresh herbs or edible flowers into the dough as you roll it to create beautiful designs. The herbs will provide both color and extra flavor to the pasta!

Though fresh noodles always taste the best, our Almond Flour Noodles can be made ahead and stored for future meals. After rolling and cutting, place noodles into an airtight container and store in the fridge for up to three days. To freeze, let noodles dry flat for about 45 minutes, then transfer to a freezer-safe container for up to two months; cook directly from frozen, when desired.
Ingredients for Almond Flour Noodles
Almond Flour – Look for blanched, finely ground almond flour as it will yield the best texture and flavor for the noodles. Do not use almond meal – it’s a completely different ingredient!
Tapioca Flour/Starch – Tapioca flour is also known as tapioca starch. It helps bind the almond flour with the other ingredients so the noodles don’t disintegrate when boiling.
Arrowroot Starch – Arrowroot starch is used as both a secondary binding agent, as well as a thickening ingredient. It makes the noodles deliciously puffy and chewy!
Salt – Just a pinch of salt in the dough and in the boiling water helps enhance the flavors of the noodles.
Xanthan Gum – Xanthan gum is needed to add flexibility to the noodles which, in non-gluten-free pasta, comes from gluten. Don’t skip it!
Water – Water is used to combine the ingredients into a dough. If the dough is too dry after the initial amount is added, drizzle in more 1 tsp about a time until the dough comes together.
Olive Oil – Olive oil adds a wonderful flavor and silkiness to the noodles! Look for cold-pressed, organic olive oil for the best taste.
Tips
If the dough feels too sticky, add more tapioca starch.
Let the noodles rest before cooking – don’t skip this step!
Do not overcook or the noodles will turn mushy. Only 2-3 minutes is necessary.

How to Make Almond Flour Noodles
Step One: Mix all dry ingredients in a medium-sized bowl.

Step Two: Make a well in the middle and slowly pour water and oil into the center. Mix until incorporated with a spatula or wooden. If the mixture is too dry, add more water about a teaspoon at a time.


Step Three: Knead until a smooth dough ball forms. Place between two pieces of parchment paper and roll into a long rectangle shape about 1/8” thick.


Step Four: (If using a pasta machine) – Cut dough into long strips and feed each piece through the pasta machine. Lay out the fresh noodles and let rest for 15 minutes.

(If using a pizza cutter) – Cut dough into noodles about 1/4”-1/2” wide. Lay out the fresh noodles and let rest for 15 minutes.

Step Five: Bring a pot of salted water to a boil, add noodles, and cook for 3 minutes. Scoop up noodles and plate with your choice of sauce and enjoy!
