These four-ingredient almond flour shortbread cookies are easy to make and are perfect for the holidays!

  1. Preheat the oven to 325 F.
  2. Line a cookie sheet with parchment paper.
  3. Add the ingredients into a medium bowl.
  4. Mix the cookies with a hand mixer until combined.
  5. Roll the dough in your hands.
  6. If the dough is too sticky, add additional almond flour until the dough comes together.
  7. Scoop the dough with a tablespoon and roll the dough into balls.
  8. Place each ball onto the cookie sheet, spacing them 1-2 inches from each other.
  9. Use the bottom of a glass or a fork to flatten the cookies.
  10. Bake the cookies for 10-12 minutes or until golden brown.
  11. Cool for 10 minutes before transferring to a cooling rack.
