  1. Preheat the oven to 325°F.
  2. Line a cookie sheet with parchment paper and set aside.
  3. Combine butter or coconut oil, vanilla extract, and sugar in a small bowl.
  4. Add the almond flour and salt and mix until combed. The dough will look dry but form into a ball once pressed together.
  5. Roll the dough out onto the cookie sheet lined with parchment paper.
  6. Roll the dough 1/4 inch thick.
  7. Stamp the cookie dough with cookie stamps.
  8. Bake the cookie dough for 8-12 minutes or until lightly brown.
  9. Remove from the oven and use a cookie cutter to cut out the cookies. Let the cookies cool before removing them from the baking sheet.
