Ingredients
- 1 cup finely ground almond flour (not almond meal)
- 3 tablespoons butter or coconut oil, room temperature
- 3 tablespoons sugar
- 1/2 teaspoon vanilla extract
- pinch of sea salt
- Jam
Instructions
- Preheat the oven to 350°F.
- Line a cookie sheet with parchment paper.
- Combine butter or coconut oil, vanilla extract, and sugar in a small bowl.
- Add the almond flour and salt and mix until combed. The dough will look dry but form into a ball once pressed together.
- Use a tablespoon to scoop the dough into balls, using your hands to form the balls.
- Place the dough balls onto a lined cookie sheet.
- Press your thumb into the center of each ball, creating an indentation for the jam.
- Spoon 1/2 teaspoon of jam into the indentation of each cookie.
- Bake the cookies for 10-12 minutes or until golden brown.
- Remove the cookies from the oven and allow them to cool before serving.
