These almond flour thumbprint cookies are gluten-free with dairy-free options and are as tasty as traditional thumbprint cookies!

  1. Preheat the oven to 350°F.
  2. Line a cookie sheet with parchment paper.
  3. Combine butter or coconut oil, vanilla extract, and sugar in a small bowl.
  4. Add the almond flour and salt and mix until combed. The dough will look dry but form into a ball once pressed together.
  5. Use a tablespoon to scoop the dough into balls, using your hands to form the balls.
  6. Place the dough balls onto a lined cookie sheet.
  7. Press your thumb into the center of each ball, creating an indentation for the jam.
  8. Spoon 1/2 teaspoon of jam into the indentation of each cookie.
  9. Bake the cookies for 10-12 minutes or until golden brown.
  10. Remove the cookies from the oven and allow them to cool before serving.
