Apple Cider Vinegar Apple and Cabbage Slaw

I love this salad because it’s sweet, savory, spicy, and satisfyingly crunchy!

Ingredients

4 cups shredded green cabbage

1 large gala apple, sliced

1 cup shredded carrots

1 large jalapeno, seeded, deveined, and diced

2 tablespoons diced red onion

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 1/2 teaspoons dijon mustard

1 teaspoon dried celery seeds

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

Instructions

Place the cabbage, apple, carrots, jalapeno, and red onion in a large bowl.

In a small bowl, whisk together the olive oil, apple cider vinegar, dijon, celery seeds, salt and pepper.

Drizzle the dressing over the salad, and toss well to coat.

Store in the refrigerator for up to 5 days.
