Apple Samoas are a simple, wholesome twist on the classic cookie, made with fresh fruit and naturally sweet ingredients.

  1. Cut the apple into ¼-inch thick slices and remove the core. You should get about 3–4 slices per apple.
  2. In a small bowl, mix together the shredded coconut, nut or seed butter, and maple syrup until fully combined.
  3. Place the apple slices on a parchment-lined plate or tray.
  4. Spoon the coconut mixture evenly onto each apple slice.
  5. In a small bowl, melt the chocolate chips with the coconut oil until smooth.
  6. Drizzle the melted chocolate over each apple slice.
  7. Place the apple slices in the freezer for 5–10 minutes, or until the chocolate is set.
  8. Enjoy immediately.
