1 large egg
1/2 cup shredded mozzarella cheese, cheddar or jack cheese work as well
2 tablespoons of almond flour
Instructions
Preheat your mini waffle iron.
Mix the eggs, shredded cheese, and almond flour together in a small bowl. The mixture will be thick and dense.
Grease the waffle maker with your favorite cooking spray and scoop half the batter (about 1/4 cup) into the waffle maker. Use a spatula to spread the batter to the edges of the waffle iron.
Close and cook the chaffle for 4-5 minutes, or until the steam no longer escapes from the sides of the iron. The chaffle should be golden brown and crisp. Remove with a fork or the spatula and repeat with the remaining batter.
The chaffles will stay crisp for some time after cooking, but if you refrigerate them you will want to toss them in the toaster over or air fryer to recrsip them.
