These coconut date balls are made with two simple ingredients: medjool dates and shredded coconut! These energy bites are the perfect afternoon healthy snack and are great for packing in school lunches.

Ingredients
1cup whole dates
1cup shredded coconut
Instructions
Bring a cup of water to a boil and soak the dates in the water for 3-5 minutes or until the dates are soft. Remove the pits from the dates.
Discard the water and pour the soaked dates into a food processor. Process the dates until they are smooth and cream.
Next spread the shredded coconut over a parchment paper lined baking sheet.
Grease your hands with coconut oil and use a tablespoon to scoop the date paste out of the food processor. Roll the date paste in your hand to form a ball. Roll the date balls into the shredded coconut. Continue to do this until all the date paste is used up.
Store the coconut date balls in an airtight container in the refrigerator.
