I love date energy balls. I’ve been making different variations of them for years and love all the flavors. Usually, date balls will have a nut base that adds healthy fats and is then coated in shredded coconut or cocoa powder. For this recipe, I wanted to duplicate the date balls I found in the grocery store. Those balls are made with only dried fruit and coconut and are my favorite. So I skipped the nuts and used dates exclusively. The result of this energy ball recipe has a lovely chewy texture and makes for the perfect snack!
How To Make Date Balls
For this recipe you will need one cup of dates, water and a cup of shredded or desiccated coconut (learn how to make desiccated coconut here).
Bring a cup of water to a boil and soak the dates in the water for 3-5 minutes or until the dates are soft.
Then discard the water and pour the soaked dates into a food processor. Process the dates until they are smooth and cream.
Next, spread the shredded coconut over a parchment paper-lined cookie sheet.
Then, grease your hands with coconut oil and use a tablespoon to scoop the date paste out of the food processor. Roll the date paste in your hand to form a ball. Roll the date balls into the shredded coconut. Continue to do this until all the date paste is used up.
Lastly, store the coconut date balls in an airtight container in the refrigerator.
