I’m always looking for healthy breakfast ideas that are quick, easy and tasty. These breakfast egg muffins check all the boxes and my kids love them! You can use a variety of different types of lunch meat and cheeses to change up the flavor of these egg cups, and if you’re not on a low-carb diet, you can serve them on top of toast!
Each ham and egg cup is under 1g of net carbs and has 13.5 grams of protein and 8 grams of fat.
How To Make Ham and Egg Cups
For this recipe you will need six eggs, six slices of ham, six tablespoons of shredded cheese, and salt and pepper or other spices like green onions or parsley.
Grease the muffin pan with coconut oil or olive oil and place a slice of deli ham in each cup. Then fill each ham cup with a tablespoon of shredded cheese. Top with a whole egg and bake in the oven for 12-15 minutes.
Top the ham and egg cups with chives and salt and pepper and serve warm.

- Ham: Use different types of ham or other lunch meat like turkey or roast beef. We like to use uncured honey ham the best in this recipe.
- Cheese: I used cheddar cheese but other types of cheeses like pepper jack, Havarti, and Monterey jack are great options as well!
- Seasoning: I typically use salt and pepper but other herbs like chives, parsley, garlic powder and cilantro are great choices for adding flavor to these egg breakfast cups!

Instructions
- Pre heat the oven to 350 degrees.
- Grease 6 muffin tins with oil. Take one ham slice and press it gently into the muffin tin. Continue until all six muffin tins are filled.
- Next, add in one tablespoon of shredded cheese to each cup.
- Crack an egg into each muffin tin and season with salt and pepper.
- Bake the ham and egg cups for 12-15 minutes or until the eggs a throughly cooked.
- Serve the egg cups warm out of the oven and enjoy!
- Store leftover egg cups in an airtight container in the refrigerator for 5-7 days.
