These coconut flour waffles are both keto and paleo-friendly, made with coconut flour, coconut cream, eggs, coconut oil, and vanilla. These waffles are light and fluffy and come together in under 10 minutes!
I love easy breakfast recipes that come together quickly and have easy cleanup. My coconut flour waffles are just that, and they can be made in a blender, making them even more effortless than traditional waffles.
This recipe is paleo-friendly, with keto options. I tested this recipe with dairy and dairy-free ingredients, and the waffles tasted terrific each time!
Coconut Flour Waffles Ingredients
Most of these ingredients will be pretty familiar – I’ve included DIY options and my recommendations for top brands where appropriate.
- 1/4 cup coconut flour, sifted (my picks for the best coconut flour – or you could just make your own coconut flour)
- 3 tablespoons coconut sugar or equivalent keto granulated sweetener (like swerve or monk fruit)
- 1 teaspoon baking powder
- pinch of salt
- 3 tablespoons coconut oil or butter, melted (quality matters – get the best coconut oil or make your own)
- 3 tablespoons coconut cream or heavy cream
- 4 eggs, at room temperature
- 1 teaspoon vanilla extract (buy good-quality stuff, or you can make your own vanilla extract)
- (optional) pure maple syrup, whipped cream, coconut whipped cream, chocolate chips, butter, bacon, or favorite waffle toppings
How To Make Coconut Flour Waffles
Making the batter for these waffles is easy peasy. I simple poured all the ingredients into my blender and blended until the batter was smooth.
Then, I let the batter sit for 3-5 minutes while the coconut flour absorbed the liquid.
Next, I poured half the batter onto hot waffle iron or waffle maker and cooked the waffles for 3-5 minutes, or until the light indicated they were ready.
Repeat for the next waffle and serve with your favorite traditional or keto waffle toppings.
Coconut Flour Waffle Recipe Tips:
- Sift your coconut flour: Coconut flour baked goods can be dense and gritty. Sifting the coconut flour before measuring and adding it to the batter will help these waffles better texture.
- Egg temperature: Cold eggs will solidify the coconut oil in the batter, making lumps. Use eggs that have come to room temperature for a smooth batter. Alternatively, you can put the eggs in warm water to bring them to room temperature quickly.
- Check your baking powder: Baking powder contains corn derived ingredients. If corn isn’t an issue for you, then use what you have. You can make baking powder without corn starch by mixing baking soda, arrowroot powder or tapioca starch, and cream of tater together. Check out my homemade baking powder recipe here.
How To Make Keto Coconut Flour Waffles
While some of the ingredients in this recipe are keto-friendly, the sweetener and coconut cream will add carbs to this recipe. I suggest using granulated erythritol sweetener and heavy cream instead of coconut sugar and coconut cream to make this recipe keto. Also, top the waffles with keto-friendly maple sauce like Lakanto’s maple-flavored syrup.

Instructions
- Preheat the waffle griddle.
- In a small bowl or blender (that’s what I used), mix the dry ingredients together until well combined.
- Next, add in the wet ingredients and continue to blend until the batter is smooth. Let the batter sit for a few minutes so the coconut flour can absorb the liquid ingredients.
- When the waffle maker is ready, pour half the batter into the waffle iron and close the lid. If you’re using a mini waffle maker, you’ll use less batter.
- Cook until the waffles are golden brown and slightly crispy. Repeat until the batter is used up. This recipe made two large waffles.
