These coconut flour waffles are the perfect low carb waffles. They are keto and paleo-friendly, made with gluten-free coconut flour, coconut cream, eggs, coconut oil, and vanilla. These waffles are light and fluffy and come together in under 10 minutes!

Ingredients
1/4cup coconut flour, sifted
3 tablespoons coconut sugar or equivalent keto granulated sweetener (like swerve or monk fruit)
1 teaspoon baking powder
pinch of salt
3 tablespoons coconut oil or butter, melted
3 tablespoons coconut cream or heavy cream
4 eggs, at room temperature
1 teaspoon vanilla extract
(optional) pure maple syrup, whipped cream, coconut whipped cream, chocolate chips, butter, bacon, or favorite waffle toppings
Instructions
Preheat the waffle griddle.
In a small bowl or blender (that’s what I used), mix the dry ingredients together until well combined.
Next, add in the wet ingredients and continue to blend until the batter is smooth. Let the batter sit for a few minutes so the coconut flour can absorb the liquid ingredients.
When the waffle maker is ready, pour half the batter into the waffle iron and close the lid. If you’re using a mini waffle maker, you’ll use less batter.
Cook until the waffles are golden brown and slightly crispy. Repeat until the batter is used up. This recipe made two large waffles.
