
Coconut Lime Rice is the dinner addition you’ve been missing! Make it tonight with just 4 main ingredients and a rice cooker!
1 3/4 cups rice (basmati or sushi)
1 can coconut milk
1 cup water (note: if using sushi rice, add 1/2 cup less water)
1 lime, juice + zest
1/2 tsp salt
1/2 tsp white pepper
Prep rice according to packaging.
Add all ingredients into the rice cooker and turn on.
When rice cooker finishes cooking, fluff the rice with a fork and serve warm. Enjoy!
To cook this rice on the stove top, add all ingredients into a pot and bring to a boil. Simmer, stirring often, until rice is thoroughly cooked, ~25 minutes. Fluff with a fork and serve warm. Enjoy!
