Ingredients for the Coconut Lime Rice
Rice – Our favorites are basmati and sushi! There is only a slight difference in taste, the biggest contrast is in texture.
Coconut Milk – Coconut milk is a star in this recipe as it gives a nutty flavor and creamy texture to the rice. At the store, look for organic and full-fat coconut milk in a can. If your can of coconut milk has separated, mix it with a fork or blend to reintegrate.
Lime Juice & Zest – The taste of lime adds such a lovely tang to the coconut rice, creating a deliciously tropical dish!
Salt & White Pepper – Salt and pepper complete the seasoning profile for the coconut lime rice. For this recipe we use White Pepper because it has a brighter flavor which compliments the lime.
Variations
Spicy: Add 1/2 chopped hot pepper to the rice cooker and get ready for a spicy kick!
