This homemade coconut mouse is tasty and creamy and rich in coconut flavor!

Ingredients
- 1/4 cup cold water
- 2 tablespoons gelatin or 4 tablespoons agar agar (vegan option)
- 1 can of coconut milk (full fat)
- 1 cup heavy whipping cream or coconut cream (vegan option)
- 1/4 cup powdered sugar
- 1 teaspoon coconut extract
- Garnish: fresh berries, whipped cream and toasted coconut flakes
Instructions
- Pour the cold water into a small bowl. Sprinkle the gelatin over the cold water and allow the gelatin to bloom for 5-10 minutes.
- While the gelatin blooms, heat the coconut milk in a medium saucepan over medium high heat.
- Bring the milk mixture to a simmer and add the bloomed gelatin.
- Use a whisk to mix the gelatin into the creamy mixture.
- Turn the heat off and remove the pan from the burner.
- Allow the the coconut milk to cool to room temperature.
- Once cooled, make the whipped cream.
- Pour the heavy cream, powdered sugar, and coconut extract into a stand mixer bowl or large bowl.
- Mix with an electric mixer until soft peaks form.
- Continue to mix the cream on low while slowly adding the cooled coconut mixture into the whipped cream.
- Mix until combined.
- Pour the coconut mousse into prepared jars and refrigerate for 4-6 hours or until set.
- Top the coconut mouse with fresh berries, whipped cream, white chocolate chips, or toasted coconut.
