This homemade coconut mouse is tasty and creamy and rich in coconut flavor!

  1. Pour the cold water into a small bowl. Sprinkle the gelatin over the cold water and allow the gelatin to bloom for 5-10 minutes.
  2. While the gelatin blooms, heat the coconut milk in a medium saucepan over medium high heat.
  3. Bring the milk mixture to a simmer and add the bloomed gelatin.
  4. Use a whisk to mix the gelatin into the creamy mixture.
  5. Turn the heat off and remove the pan from the burner.
  6. Allow the the coconut milk to cool to room temperature.
  7. Once cooled, make the whipped cream.
  8. Pour the heavy cream, powdered sugar, and coconut extract into a stand mixer bowl or large bowl.
  9. Mix with an electric mixer until soft peaks form.
  10. Continue to mix the cream on low while slowly adding the cooled coconut mixture into the whipped cream.
  11. Mix until combined.
  12. Pour the coconut mousse into prepared jars and refrigerate for 4-6 hours or until set.
  13. Top the coconut mouse with fresh berries, whipped cream, white chocolate chips, or toasted coconut.
