How To Make Coconut Mousse
For this recipe you will need water, gelatin, coconut milk, cream, powdered sugar, and coconut extract.

Mix the cold water and gelatin together in a small bowl. Let the gelatin bloom for 5-10 minutes.
While the gelatin blooms, heat the coconut milk in a medium saucepan over medium high heat.
Bring the milk mixture to a simmer and pour the gelatin mixture into the warm coconut milk.
Use a whisk to mix coconut milk and gelatin together.
Turn the heat off and remove the pan from the burner.
Allow the the coconut milk to cool to room temperature.
Once cooled, make the whipped cream.
Pour the heavy cream, powdered sugar, and coconut extract into a stand mixer bowl or large bowl.
Mix with an electric mixer with the whisk attachment on medium speed until soft peaks form.
Continue to mix the cream on low while slowly adding the cooled coconut mixture into the whipped cream.
Mix until combined.
Pour the coconut mousse mixture into prepared jars and refrigerate for 4-6 hours or until set.
