This soft-serve coconut sorbet is cooling and refreshing on a hot summer day!

  1. Heat the coconut water and sugar in a small saucepan over medium heat.
  2. Bring to a simmer and remove from the heat. Stir until the sugar dissolves, and allow the mixture to cool to room temperature.
  3. Mix the coconut milk, cooled coconut water mixture, shredded coconut, and vanilla extract in a separate bowl.
  4. Mix well and pour into the ice cream maker. Follow the manufacturer’s instructions for churning ice cream.
  5. Once churned, scoop the coconut sorbet into a freezer-safe container. Serve immediately, or freeze.
  6. Store the leftover sorbet in the freezer.
