This soft-serve coconut sorbet is cooling and refreshing on a hot summer day!

Ingredients
- 1 can of coconut milk, chilled
- 1 cup of coconut water
- 3/4 cup of sugar
- 1/4 cup shredded coconut
- 1/2 teaspoon of vanilla extract
Instructions
- Heat the coconut water and sugar in a small saucepan over medium heat.
- Bring to a simmer and remove from the heat. Stir until the sugar dissolves, and allow the mixture to cool to room temperature.
- Mix the coconut milk, cooled coconut water mixture, shredded coconut, and vanilla extract in a separate bowl.
- Mix well and pour into the ice cream maker. Follow the manufacturer’s instructions for churning ice cream.
- Once churned, scoop the coconut sorbet into a freezer-safe container. Serve immediately, or freeze.
- Store the leftover sorbet in the freezer.
