These are the easiest and most delicious gluten-free cookies you’ll ever make! They’re loaded with almond flour and vanilla for the perfect kiss of flavor.

Ingredients

1 cup almond flour

3 tablespoons granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon kosher salt

2 tablespoons cold water

1/2 teaspoon vanilla extract

1/4 teaspoon almond extract

Instructions

Preheat oven to 350 degrees.

Line a medium, rimmed sheet pan with parchment.

In a large bowl, whisk together all of the dried ingredients.

Add in the water, vanilla, and almond extract.

Whisk well to combine.

Using 2 spoons, drop a scant 1 tablespoon of the batter on the prepared pan.

Bake for 12-15 minutes, or until the cookies have a little color and the center has firmed up.

Let the cookies cool completely on a metal rack.

Store in an airtight container at room temperature for up to 3 days.
