Here are the ingredients you’ll need for these delicious cookies:
- 1 cup almond flour
- 3 tablespoons granulated sugar
- ½ teaspoon baking powder
- ¼ teaspoon kosher salt
- 2 tablespoons cold water
- ½ teaspoon vanilla extract
- ¼ teaspoon almond extract
If you’d prefer not to use granulated sugar, you don’t have to! Feel free to grab some coconut sugar, or even light brown sugar for a fun depth of flavor!
For a different flavor profile…mini chocolate chips would be amazing in these cookies! As would dried cranberries, dried cherries, or even dried blueberries!
How to make gluten-free almond flour cookies
Once you’ve gathered the ingredients above…
- Preheat oven to 350 degrees.
- Line a medium, rimmed sheet pan with parchment.
- In a large bowl, whisk together all of the dried ingredients.
- Add in the water, vanilla, and almond extract.
- Whisk well to combine.
- Using 2 spoons, drop a scant 1 tablespoon of the batter on the prepared pan.
- Bake for 12-15 minutes, or until the cookies have a little color and the center has firmed up.
- Let the cookies cool completely on a metal rack.
- Store in an airtight container at room temperature for up to 3 days.
