2 pounds apples, fuji, honey crisp, or granny smith
2 tablespoons lemon juice
3tablespoons maple syrup
3tablespoons unsalted butter, cut into pieces
3/4 cup almond flour
1/4 cup arrowroot powder or cassava flour
1/2 cup chopped nuts
1/2 cup coconut sugar
1/2 teaspoon ground cinnamon
pinch of nutmeg
1/4 teaspoon sea salt
6tablespoons unsalted butter or coconut oil (melted)
Instructions
Preheat the oven to 350ºF.
Peel the apples and slice them into even-sized slices.
Pour the lemon juice, maple syrup, and salt over the apples and toss to cover them in the mixture.
Add the sliced apples to a pie or tart pan and top with the butter pieces.
Bake for 30 minutes or until bubbling and cooked through.
Mix the almond flour, arrowroot powder, nuts, coconut sugar, cinnamon, nutmeg, and salt together in a bowl. Stir to combine.
Add the melted butter and stir until combined.
Spread the topping over the baked apples.
Return the apple crisp to the oven and bake until the topping is deep golden, about 25-30 minutes.
Let cool for 5 minutes before serving.
Serve the crisp alone or topped with coconut whipped cream or vanilla ice cream.
