Ingredients
2 medium zucchini
1 egg
1/2cup coconut flour (or almond flour)
1/4cup grated parmesan cheese
1 teaspoon dry Italian seasoning
salt and black pepper
Oil for spraying (optional)
Instructions
Slice the zucchini into fry length slices. Place the zucchini on a paper bowl lined baking sheet. Take another paper bowl and pat the zucchini dry.
In a small shallow bowl mix the coconut flour, parmesan cheese, italian seasoning, salt and pepper tougher. Set aside.
In another bowl beat the egg and set aside.
Take a few zucchini slices and drench them in the egg mixture, then add them to the dry mixture to coat the zucchini. Place the zucchini fries on a baking sheet or air fryer basket. Spray with olive oil spray or your favorite oil spray and air fry the zucchini fries at 400 degrees Fahrenheit for 10 minutes or until crispy. You may need to make two batches, depending on the size of your air fryer.
If you don’t have an air fryer you can bake these keto zucchini fries in a toaster oven on the air frying setting or convection setting for 15-20 minutes, or until crispy. Serve immediately with ranch dressing, fry sauce, or your favorite dipping sauces.
